Carrot Coriander Soup
Ingredients:
6 or 7
medium carrots
2 medium potatoes
1 large onion
1 teaspoon chopped garlic
1 teaspoon turmeric
4 teaspoons coriander powder
1cm fresh ginger
Salt to taste
1/2 teaspoon mekelesha
A little Oil
Water or Stock

Directions:
Simply
start with a large pan with a little oil, you could use butter if you like and
add all the ingredients apart from the mekelesha and cook for about 5 mins.
Once the vegetables have soften add water or stock and bring to a boil then simmer for 25 mins or until the vegetables are soft.

Now we are ready to blend into a smooth creamy soup.
Finally add salt to taste and the mekelesha, stir and serve.
You could also add fresh coriander – cilantro.
